Preheat oven to 400 degrees and grease a baking sheet with oil or line with parchment paper.
Cut off both ends of the plantain and remove the peel by cutting the peel lengthwise about three times or until you are able to remove it easily.
Slice the plantain as thinly as possible with a sharp knife and spread slices onto your baking sheet.
Brush plantains with olive oil and season generously with salt and pepper to taste.
Bake in preheated oven for about 20 minutes (flipping the chips halfway through) or until crispy.
Remove from oven and season again with salt and pepper and any other desired seasonings. Serve with guac, hummus or enjoy as is!
